Behind every soft bun and crisp biscuit at Dolphin Bakery is a procurement decision made weeks or months earlier. As Director of Procurement, my role is to ensure that production never slows down and quality never slips.

Procurement in the bakery industry is often underestimated. But ingredient quality, price stability, and supplier reliability directly shape what customers taste. We source high-protein flours, baking fats, sugars, packaging materials, and hygiene supplies from vetted suppliers across the UAE, India, and other markets.

What matters most is balance. We negotiate for cost efficiency, but never at the expense of consistency. Long-term supplier relationships allow us to maintain stable pricing, especially during volatile periods like Ramadan or festive seasons.

Another critical aspect of my role is contingency planning. Delayed shipments, sudden price fluctuations, or raw material shortages can disrupt production overnight. To manage this, we maintain multi-tier vendor networks, safety stock models, and forward planning aligned with demand forecasts.

Procurement at Dolphin is  strategic. We source with an eye on future product development, packaging innovation, and compliance requirements. Every decision must support production, operations, and ultimately the customer.

It’s not a role that often gets noticed. But when procurement works well, everything else flows smoothly. And that quiet reliability is something I take great pride in: because quality, in the end, begins long before the oven is switched on.
