Mr. Muhammad Iqbal

Director, Procurement – Dolphin Bakery

Mr. Iqbal is the strategic force behind Dolphin’s procurement and supplier management. Tasked with sourcing everything from raw baking materials to packaging, fuel, and hygiene products, Iqbal ensures that quality and cost go hand in hand. His role is critical in maintaining uninterrupted production and avoiding supply-side fluctuations. He maintains strong relationships with suppliers to ensure consistent quality and timely supply. His industry connections help the company remain competitive in the market.

His experience in cost analysis, forecasting, and risk mitigation allows Dolphin to operate efficiently without passing undue costs onto consumers. He also plays an important role in client coordination and vendor negotiations. His strategic purchasing decisions support smooth and uninterrupted production.

Mr. Iqbal also works in tandem with the food safety team to ensure all inputs meet compliance benchmarks. His vendor partnerships are rooted in mutual growth and transparency, making him a key enabler of Dolphin’s continued affordability and product trust.

Mr. Subash K. S.

Director - Production, Dolphin Bakery

Mr. Subash K. S. serves as Director - Production at Dolphin Bakery, where he plays a central role in overseeing manufacturing, quality control, and production efficiency across the company’s UAE operations. A second generation baker, having more than 30 years of hands-on experience in bakery production and food manufacturing, he brings deep technical expertise and operational discipline to Dolphin’s growth journey.

Mr. Subash is also the Managing Director of Ajantha Bakers, a well-established regional bakery brand in North Chennai, India. Under his leadership, Ajantha Bakers grew from a single local bakery into a multi-outlet operation supported by an ISO-certified manufacturing facility. His experience spans both Indian and Middle Eastern markets, giving him a strong understanding of scale, cost control, and multicultural taste preferences.

Academically, Mr. Subash holds an MBA in Finance from Madras University and a Mainframe Computer Systems qualification from IBM, a rare combination that allows him to integrate financial discipline, data systems, and production planning. He has designed and implemented custom ERP systems for bakery operations, covering procurement, inventory, production scheduling, cost management, and distribution.

A recognised expert in recipe development and bakery process innovation, Mr. Subash has developed multiple best-selling products and has contributed to recipe formulation for leading FMCG brands, including the development of cake rusk formulations. He is known for backward integration strategies, developing in-house improvers, blends, and preservatives, reducing dependency on premixes while maintaining quality and shelf stability.

Under his direction, Dolphin’s production line has not only scaled but also evolved to meet the highest standards of consistency and food safety. He works in close coordination with Dolphin’s supply chain, ensuring that production aligns with demand trends and seasonal spikes. He is also responsible for monitoring regulatory compliance and adopting globally recommended practices in hygiene, safety, and sustainability.

Firosekhan Chozhiyattattayil Manthiyil

Director, Strategy & Distribution – Dolphin Bakery

One of the leading impact entrepreneurs in the UAE, Mr. Firosekhan CM contributes to Dolphin Bakery’s long-term growth orientation and market development framework. He provides strategic perspective on expansion priorities, distribution direction and brand positioning, supporting the company’s evolution across retail channels and regional markets.

His involvement centres on guidance, helping shape decisions related to market entry, partnership strategy and long-term growth. Through this role, he supports the company’s leadership in strengthening corporate governance, stability and sustainable expansion planning. From his expereince spanning government liaison and business formation, Mr. Firosekhan offers insight into market dynamics and consumer trends, ensuring Dolphin’s offerings remain relevant to its core consumer base.

Mr. Firosekhan also plays an advisory role in the evolution of Dolphin’s brand identity, helping ensure that its community-rooted character is preserved as the brand grows in scale and visibility. Ms. Lini Varghese

Director, Dolphin Bakery

Ms. Lini Varghese serves as Director at Dolphin Bakery, where she provides strategic oversight of the company’s quality systems, food safety framework, and compliance standards. With a Master’s degree in Microbiology, she brings deep scientific expertise to Dolphin’s commitment to delivering safe, reliable, and consistently high-quality bakery products across the UAE.

Her role focuses on strengthening Dolphin Bakery’s food safety culture, ensuring that quality is embedded at every stage: from raw material assessment and production controls to packaging, storage and distribution; aligning processes with HACCP principles, ISO-aligned systems, and regulatory requirements, while continuously upgrading internal standards in line with global best practices.

Her microbiology background enables a data-driven, preventive approach to food safety, focusing on consistency, traceability and continuous improvement.
